Gender just basically means:
"are you a boy, or a girl?"
skin tone means just that; the
shade of
your skin.
Build is body type, whether the character is:

Height is...honestly, do I
have to explain this one?

Clothing is just that, you can mix-and-match what your character wears.

@Tony - Oh geez, I hope you're joking. I went by avatar size alone. Pretty much the only reason you got used in that scene was for the "Tony face;" Glue's character begged for that face.
